Apple Season Already?

It seems crazy for me to think its that time of year already when the leaves start turning, the fruit is ripening and the nights get cooler. But its not officially fall yet, I just need to make that clear!
Change is always happening, you think we would be used to it now. What about change that your not sure should happen. Like a move, change of jobs, and the times when prayers are said like "Lord please only if its your will" because you just don't know what the right decision is. Does the Lord so often (in my opinion) bring us to these forks in the road just to see how we respond? And even when we do make the wrong decision, the Lord is still there, scoops us up and makes something beautiful out of our own mistake even if its just to help us see where we went wrong so we can learn and not make that mistake again. Like a bruised or crow bitten apple, cut the bad off and turn it into...oh decisions...apple sauce or apple cake? hmm...
How about Appley Cake


 This is a very tasty recipe, the cardamom gives it a great flavour. And very apple-y...so moist.

4 cups granny smith apples (or the like) peeled, cored, and thinly sliced
2 tsp. lemon juice
1 tb. sugar
3/4 cup margarine, melted
1 cup sugar
2 eggs
1 cup flour
2 tsp. cinnamon
1 tsp. cardamom
1/2 tsp. salt
1 tb. sugar

Butter a 10" pie plate. In a large bowl combine the apple slices with the lemon juice and 1 tb. sugar, and distribute evenly in the pie plate. Then wisk the melted butter and 1 cup sugar, add the eggs, 1 at a time wisking well after each. Add the flour, spices and salt and mix until smooth. Pour evenly over the apples and then sprinkle the last tablespoon of sugar over top. Bake in a 350 oven for 45 min. or until the apples are tender and crust is golden brown and when pricked with a fork it comes out clean.
 


The little old apple tree that gets lots of apples and gets lots of crow visitors to peck away at my apples :( oh well turn them into baked goods :) 
Thinking about praying for Gods will... Ive been stressing myself out over a certain decision and praying for God to open or close the door in this, according to His will, got me thinking... what if it just happens any old way and I fear if the door is open but it isn't God's will. But then I found these truths in God's word:
Luke 11:9 "And so I tell you, keep asking and you will receive what you ask for."
1 John 5:14,15 And we are confident that he hears us whenever we ask for anything that pleases him. And since we know he hears us when we make our requests, we also know that he will give us what we ask for.
And so with these truths I know that when I ask that His will be done, and please close the door to the possibility of anything that is not His will, I can trust God that He will do as He said in His Word. Thank you Father for that assurance.

Lunberjack Cake


Here is a good, 'ole fashioned cake, that'll stick to your ribs. Good with a cup of coffee. I know...I tried it.
Preheat oven to350. Grease 9" spring form pan.
Get out a small pot and bring 1 CUP of WATER with your dates to a boil. Once that happens, remove from the heat and stir in 1 TSP of BAKING SODA. Leave to cool.
In the mean time in a small bowl, stir together the flour, baking powder, and salt.
In a large bowl, beat together the butter, sugar, egg and vanilla. Slowly beat in the date mixture. Incorporate the flour mixture. Then fold in the apple and coconut.
Spread the batter in the pan, evenly.
Bake 45-50 min. The cake may dip, don't worry though. It will be moist and dense.

Snappy-Apple-Sauce

 Quite a few of my apples were not lookin too hot.

 
Look at this one...and he was one of many sad lookin apples.


 So I decided it was time to make applesauce. I have heard of making applesauce without peeling the apples and so I thought I'd give it a shot.
 Just had to wash up the apples good and cut out the bad spots.

 
Then I just used my handy apple slicing tool, to cut them up and get rid of the core. This was so quick compared to the usual process of peeling and cutting.




I added the juice of a lemon for flavour and to keep the sauce a bit lighter in colour.


 After I put my big batch of apples, lemon juice, and a half cup of water in a large pot, I put the lid on and let it cook over medium heat until the apples were all soft.
 I guess some would use a food mill to make it into the sauce, but I just poured the soft apples into my colander and used a wooden spoon to squish through to separate the peels. Very easy and it took much less time then if I had peeled all them apples.
 I do declare, I like the unpeeled applesauce version. Easy, Healthy, and Thrifty. I like this combination!

Cream & Crumb Schnitz Apple Pie

Cream and Crumb what ?? kinda pie??
Well apparently schnitz just means the way the apple is sliced. But you can just call this Shnazzy Pie or O My what Yummy Cream and Crumb Pie. It doesnt matter, just try it, its so easy and yummy!

You need:
1 cup brown sugar
1/3 cup flour
3 tbsp. soft butter
4-7 apples
2/3 cups sour cream
3/4 tsp. cinnamon
9 inch unbaked pie crust

Directions: Blend the brown sugar, flour, and butter into crumbs. Sprinkle 1/3 of the mixture into the bottom of the pie shell.



Peel and core the apples.


I don't know why but I get personal satisfaction when I peel each apple in one long strip. I know, its weird.


Cut them into 1 inch segments (shnitz). Arrange them into circles over the crumbs.


Mix 1/2 remaining crumbs with the sour cream and spread over the apples.


Mix the rest of the crumbs with the cinnamon and sprinkle it evenly over the top.

 
Bake at 425 degrees for 10 minutes. Turn temperature down to 350 degrees and bake another 30 min.


Cool and serve.

Buried Treasure

 This is what I read on my perpetual flip calendar at the end of my long day in the kitchen...
 The time of business does not with me differ from the time of prayer.  I was able to make some buried treasure (frozen veggies), with getting a really good deal on large 10kg. bags of carrots and onions. I par-boiled the carrots to freeze well.
 Method: Peel and slice the carrots of course. Have a large pot 1/2 full of water set to boil as you are preparing the carrots. Once the water is boiling, dump the carrots in and bring to a boil and then let them boil for 2 or 3 min. Have a bowl of cold water set near by to ladle the cooked carrots out with a slotted spoon and into the cold water. This stopps the carrots from cooking any longer. Then dump into a collandar.


Once dripp dried, I bagged them in clean milk bags (which make great cost efficient freezer bags and is a great way to make use of somthing regularly discarded right away) and closed them off with a milk bag closure.
 
Apple Loaf
I reciently bought a bushel of apples so I'm gunna be baking a lot of appley things. I made two of these with the following recipe and brought one to bible study. Itwas liked so much, that the recipe was requested.
 

2 cups peeled chopped apples (about 3 med. apples)
2 cups sugar, mixed with the apples
3 cups of flour
3 tsp. baking soda
2 tsp. cinnamon
1 cup of butter, melted
2 eggs
1 tsp. vanilla
-- > Heat oven to 325. Grease two loaf pans. In a large bowl mix all the dry ingredients. Stir in the apple-sugar mixture. Mix in the remaining 3 (wet) ingredients. Divide into the 2 pans. Bake for 1 1/4 to 1 1/2 hours.

 
After all the chopping it was refreshing to get out for a walk and enjoy all the browns and yellows left on the trees. This oak behind the kids was so beautiful. The diversity and mixture of colours of and on each leaf  was gorgeous!
